Long Bean And Mushroom Adobo

IMG_6038.JPGWhen one thinks adobo — that sumptuous Filipino dish — it’s likely to be chicken or pork, or in some cases seafood like squid.  But you can actually adobo-ize almost anything, including vegetables like long beans and mushrooms, which is what this recipe is about.

Adobo is all about the sauce or marinade that includes soy sauce and vinegar, and that’s exactly what we’re doing with this long bean and mushroom adobo.

Who says one can’t be vegetarian and eat adobo?


1 cup long beans, cut into 2-inch pieces

1 cup fresh Shiitake mushrooms, sliced

5 cloves garlic, peeled and crushed

3 pcs dried basil leaves

1/2 cup soy sauce

1/2 cup white vinegar

Salt and pepper to taste

1 cup water


In a medium pan, add in water along with the garlic and basil leaves.  Bring to a quick boil. Reduce to medium heat and add in mushrooms and long beans.  Add vinegar and cook for about 2 minutes before adding the soy sauce. Reduce to low heat and add salt and pepper to taste.  Cook until the vegetables are tender but not overcooked.  Remove from heat and serve warm with steamed rice.
