You Can Have Your Vegetable. . . And Eat Your Fruit Too!

imageHow do you have your vegetables, and eat your fruits too? Easy.  Just try this simple recipe that’s healthy, delicious and totally vegetarian. No complicated recipe.

Just take desired amount of fresh bok choy, throroughly washed and sliced into thin ribbons. Peel a fresh, ripe mango and slice into tiny cubes.  Peel and mince about 6 cloves garlic.  Heat a small amount of Olive oil in a pan over medium heat.  Add in garlic and sauté until golden brown.  Add in bok choy and stir fry for a few minutes, adding salt and pepper to taste.  Remove from heat and transfer to a serving plate.  Top with mango slices.

See how easy that was?
