Sweet Braised Pork

imageSweetened cooked meat has been a favorite of mine, but nothing beats the comfort of eating sweet, braised pork,  It goes well with steamed or fried rice and other accompaniments such as steamed, leafy vegetables.  I know, I know.  You see some fat in the pork.  It’s just not the same without it.  And what do people always say, anyway?  Everything in moderation.  But you can always choose to cut out the fat.



1 lb, pork leg or belly, cut into 1-inch pieces

1 onion, quartered

4 pcs, dried basil leaf

2 pcs, star anise

2 cups water

3/4 cup soy sauce

3/4 cup white vinegar

1 cup brown sugar

5 cloves garlic, minced

Salt and pepper to taste

1/2 cup unsalted peanuts

Mint leaves for garnish



Add water, pork, onion, basil, star anise and garlic to a pot, and bring to a boil.  Add salt and pepper to taste and continue cooking until pork pieces become tender.  Remove from heat and drain liquid.  In a large bowl, mix together soy sauce, vinegar and sugar.  Add the pork to the bowl and marinate for at least 3o minutes.  Add the pork and marinade to a pot and bring to a boil.  Reduce heat and continue cooking for another 10-15 minutes.  Remove from heat and transfer the pork pieces to a serving bowl or platter.  Use some of the liquid to drench the pork.  Add in peanutes and garnish the dish with fresh mint leaves.
