Chive and Chinese Leek Frittata

imageI’ve always fancied grass-like vegetables (or herbs) like green onions, leek and chives. You could add them in almost anything you cook not only for the added flavor but for the visual green appeal. I’ve made green onion cakes in the past and I just love ’em.  This time around, I wanted to experiment with a frittata featuring both Chinese leek and chives. I couldn’t be happier with the result. Topping the frittata with crumbled goat cheese was the icing on the cake, so to speak.


6 eggs

1/3 cup, diced tomatoes

1/3 cup, chopped Chinese leek

1/3 cup, chopped chives

Salt and pepper to taste

1/4 cup goat cheese crumbles

Olive oil spray

Leek flowers for garnish


Pre-heat oven to 375 degrees. In a medium bowl, whisk the eggs and add salt and pepper to taste.  Add tomatoes, leek and chives and continue to whisk. Spray Olive oil into an oven-safe pan.  Transfer egg mixture into the pan and place in oven.  Cook for about 15 minutes. Remove from heat, slice and top with goat cheese crumbles. Garnish with fresh leek flowers.
