Got Grapes? Will Have Chicken Salad!

imageI’ve made salads before using dried raisins as one of the ingredients. They give the salad the slightly sweet taste that I always look for in chicken or macaroni salads.  But grapes in salad?  Why not, after all raisins were grapes once upon a time, before they were shrunk and dried.

So for this recipe, I added seedless green grapes and I couldn’t be more pleased with the outcome. It made for a perfect lunch over grilled Ciabatta bread.

INGREDIENTS

2 cups, cooked chicken breast, cubed or diced

1 cup seedless grapes (green or red), sliced in half

1 cup Swiss cheese, sliced into tiny cubes

1/2 can water chestnuts, drained and chopped

1/3 cup finely chopped celery

1/3 cup chopped green onions

2/3 cup mayonnaise

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

1/4 teaspoon ground black pepper

1 tablespoon lemon juice

Salt to taste

1 tbsp sugar

DIRECTIONS

In a medium bowl, whisk together the mayonnaise, salt, poultry seasoning, onion powder, garlic powder, pepper, sugar and lemon juice. In a large bowl, toss together the chicken, celery, green onions, water chestnuts, Swiss cheese, and grapes. Add the mayonnaise mixture, and stir to coat. Chill until serving.
