Orange-crusted Baked Cod
I’ve prepared many breaded fish recipes before but this orange-crusted cod beats them all. Actually, you can use tilapia or other white fish, but the point is, don’t forget the orange! The combination of orange juice, butter, fresh basil, bread crumbs and garlic makes for a perfect crust over your baked white fish.
1 large cod (or tilapia) fish fillet
1 cup orange juice
5 cloves of garlic, peeled and crushed
1/3 cup minced fresh basil
1/3 cup Panko bread crumbs
2-3 fresh orange slices for garnish
2 tbps butter, melted
Place 1/2 cup orange juice in a medium ziplock plastic bag, along with the fish fillet. Shake to coat the fish, seal and refrigerate for at least 3 hours. Pre-heat oven to 450 degrees. Retrieve the marinated fish and discard the juice. Place fish fillet in a pan lined with aluminum foil. In a bowl, whisk together melted butter, the rest of the orange juice, garlic, basil and bread crumbs. Coat the fish with the butter mixture. Bake the fish for about 15 minutes, until the crust turns golden brown. (You can turn the oven to ‘broil’ in the last 3 minutes of baking). Remove from heat. Place fish on a serving platter and garnish with fresh orange slices.
