Low Carb Fried ‘Rice’ (Cauliflower)

imageWill anyone who does not like fried rice please stand up? But what if you’re on a low-carb diet?  No worries.  This recipe will give you the pleasure of having your fried ‘rice’ without the rice.  The secret is to substitute the rice with shredded cauliflower.  No special equipment needed, just the same grater or shredder you use for your cheese. For this recipe, we used ham for the protein ingredient but you can always use shrimp, chicken or keep it totally vegitarian.  Your choice. Your fried ‘rice.’

INGREDIENTS

1 head, cauliflower, separated into florets then shredded

1/2 cup frozen green peas

1/2 cup cooked carrot, sliced into tiny cubes

5 cloves garlic, peeled, crushed and chopped

3/4 cup cooked ham, sliced into tiny cubes

1/2 cup sliced green onions

1/3 cup tomatoes, sliced into tiny cubes

2 tbsps Olive oil

Salt and pepper to taste

2 tbsps soy sauce

1/2 tsp turmeric

1 tbsp fresh cilantro, chopped

DIRECTIONS

Heat Olive oil in a wok over medium heat.  Saute garlic until golden brown.  Add half of the green onions and cook for 30 seconds.  Add peas and carrots and cook until just softened.  Add cauliflower. Stir and cook until cauliflower becomes tender but firm to the bite. Add salt and pepper to taste.  Stir in ham. Add soy sauce. Cook for about 5 minutes. Beat the egg and pour over cauliflower mixture.  Add turmeric. Cook for another 2-3 minutes.  Remove from heat.  to serve, place fried “rice” on a serving plate and top with the remaining green onions, tomatoes and cilantro.
