Home-made Seafood Fried Rice

fried rice

I’d like you let you in on a little secret.  You don’t have to make a trip to your favorite Chinese restaurant to have your seafood fried rice.  You can make it right in the comfort of your home kitchen!

You can add as many of your favorite seafood, but for now, I’ve limited my ingredients to shrimp, catfish, octopus and mussels.  This type of fried rice is a meal all by itself, no need to partner it with other meat or seafood dishes.

INGREDIENTS image

2 cups steamed rice (mixture of white and sprouted rice), cooled

1/2 cup catfish fillet, cut into bite-sized pieces

1/2 cup cooked octopus, cut into bite-sized pieces

12 pieces mussels, taken out of the shell

12 pieces cooked shrimp, heads off, shell on

6 cloves garlic, peeled and crushed

2 tbps onions, chopped

1 tbsp green onions for garnish

1 egg

2 tbsps Olive oil

Salt and pepper to taste

DIRECTIONS

In a large wok, heat 1 tbsp Olive oil over medium-high heat. Add 1/2 of the garlic and 1 tbsp chopped onions.  Saute until garlic turns golden brown and onions become tender. Add catfish, octopus and mussels and stir-fry for three minutes. Add salt and pepper to taste.  Remove from heat and set aside.  In the same wok, add the rest of the Olive oil.  Add in the remaining garlic and onions and cook until garlic turns golden brown and onions become tender.  Add in cooked rice. Crack the egg over the rice and stir-fry for five minutes. Add salt and pepper to taste. Remove from heat. Place fried rice on a serving platter and top with the seafood mixture. Top with cooked shrimp and sprinkle with green onions.
