While these breaded catfish are great for appetizers, they can be served as a main dish with a bowl of steamed rice and vegetables. You can cook them anyway you like: crispy or soft and juicy.So the next time you entertain home guests for cocktails or dinner, consider serving serving catfish nuggets. The good news is they are so quick and easy to prepare.
3 pcs. catfish fillet, sliced into 3-inch strips
1 egg, beaten
1/2 cup all-purpose flour
3/4 cup Panko bread crumbs
Salt and pepper to taste
1/3 cup Olive oil for frying
Place the beaten egg, flour and bread crumbs in separate bowls or plates. Season catfish with salt and pepper to taste. Take each catfish strip and roll over the flour, then dip into the egg and finally roll over the bread crumbs. Repeat for all the catfish slices. Heat Olive oil in a frying pan over medium heat. Fry the breaded catfish in batches until either side turns golden brown and crispy. Remove from heat and place on a plate lined with paper towel to drain excess oil. Serve warm with tomatoes slices and your favorite dip or sauce (ketchup, mayonnaise, Sriracha sauce, etc.)
