Hawaiian Picadillo

imageThe ingredients I used for this recipe are basic to a Filipino/Spanish dish called Picadillo. I thought I’d make a Hawaiian version by adding pineapple. Potatoes are commonly used in this dish, but I skipped the carbs and used a mixture of red, yellow and green bell peppers. To give a slightly different flavor to the ground pork,  I added a little bit of roast red pork seasoning mix (available at most Asian grocery stores). Finally, I cracked an egg over the mixture to have my day’s serving of dairy.


1 lb ground pork

1/3 cup red bell pepper, chopped

1/3 cup green bell pepper, chopped

1/3 cup yellow vell pepper, chopped

1 cup, pineapple chunks

1 small onion,  chopped

1 medium tomato, chopped

3 cloves garlic, peeled and crushed

2 tbsps Olive oil

1 egg

1 tbsp roast pork seasoning mix

2 tbsps soy sauce

Salt and pepper to taste


In a large wok, heat Olive oil in medium high heat. Add garlic and sauté until golden brown. Add onions and tomatoes and cook for about a minute.  Add ground pork and cook for 3 minutes. Add salt and pepper to taste , seasoning mix and soy sauce.  Reduce heat to low and add bell peppers. Crack the egg over the mixture. Add pineapple. Cover wok and let simmer for 2-3 minutes.  Turn off heat and serve warm.
