Homemade Fil-Hawaiian Deep Dish Pizza

photo(288)I’ve been thinking a lot about the Philippines and Hawaii lately.  In fact, while I was in the “planning for the future” mode, I had narrowed down the places where one day I would like to retire to these two places so dear to my heart.  The Philippines is my homeland.  Hawaii is a place like no other that I have lived in or visited anywhere in the world. I lived on Oahu for two years and I go visit almost every year for vacation.

All of a sudden, I thought of Shakey’s Pizza which I have encountered many times both in the Philippines and Hawaii.  I have always considered pizza as a comfort food, until I had my first Hawaiian pizza.  Now I consider it to be pizza gourmet (the Hawaiian pizza, that is)!

So what pizza recipe can I come up with that I can label  both as Filipino and Hawaiian?  The Fil-Hawaiian deep dish pizza! The main ingredients are pineapple which is the signature ingredient for the Hawaiian pizza, and longganiza, the popular Filipino sausage. And to complete this never-before-made pizza, I used banana ketchup for the sauce.  It is a a ketchup unique to the Philippines.


1 can (13.8 oz) Pillsbury Pizza dough

1 package (10.5 oz) skinless sweet pork longganiza (available at Filipino or Asian grocery stores)

3 cups, shredded mozzarella cheese

1/2 cup button mushrooms, sliced

1/3 cup Jufran banana ketchup, hot (available at Filipino or Asian grocery stores)

1/3 cup Jufran banana sauce, regular (available at Filipino or Asian grocery stores)

1 tbsp Olive oil

1/2 cup water

1/4 cup fresh cilantro, sliced


Place longganizas in a medium wok and add 1/2 cup water to simmer over medium heat.  When the water fully evaporates, remove from heat and allow sausages to cool before slicing them into small pieces. Prepare the dough according to package instructions.  Lightly grease the bottom and sides of a deep dish baking pan with Olive oil. Place dough into the pan, pressing it onto the bottom and sides. Add sausages, spreading evenly over the dough. Add in the cheese and mushrooms, and finally the banana ketchup.  Preheat oven to 400 degrees.  Bake the pizza for 20-25 minutes. Slice and serve, topping with fresh cilantro.
