BroCauli Cheese Pancakes

photo(286)I coined the word “BroCauli” to refer to a combination of two favorite vegetables, broccoli and cauliflower.  I use these  a lot as ingredients in many meat dishes or simply as side vegetables – usually steamed –  to accompany various recipes. But I know somehow, they stand on their own as a main dish.  I’ve seen cauliflower prepared as breaded pancakes, but I thought I’d try them in combination with broccoli.  They have the same texture, so I know they’d go well together.  But more importantly, adding broccoli to the pancake mix will give this dish an appetizing green color.


1 cup broccoli florets

1 cup cauliflower florets

2 eggs

3/4 cup grated Parmesan cheese

1 cup bread crumbs

1/2 tsp cayenne pepper

2-3 tbsps Olive oil

Salt to taste

2 cups water

1/3 cup fresh green onions, thinly sliced


In a medium sauce pan, bring water to a boil.  Add the broccoli and cauliflower and cook until tender.  Drain water from the pan.  Using a meat tenderizer or bar muddler, smash the florets while still warm.  Add in eggs, cheese, breadcrumbs, cayenne pepper and salt to taste.  Heat Olive oil in a frying pan.  Form the mixture into 3-inch patties and fry them until browned on both sides.  Remove from pan and place cooked patties on a plate lined with paper towel to drain excess oil.  Transfer to a serving plate and top with green onions.  OPTIONAL: serve with ketchup and/or mayonnaise or soy sauce.
