Garlic Fried Rice Plus Your Favorite Breakfast Meat
Garlic fried rice is a very common breakfast fare in the Philippines. Rightly so, for what better way is there to utilize the previous night’s leftover steamed rice than to “recycle” it the next morning to go with one’s favorite meat or egg dish?
This morning, I thought of making garlic fried rice to go with a couple slices of rolled pork sausage I picked up from my favorite Vietnamese grocery store in San Jose. I tweaked my fried rice by adding bits of imitation crab, fresh green onions and shredded pork skin which is also available at the Vietnamese grocery store.
Many people wake up to the aroma of freshly-brewed coffee. Filipinos, myself included, like to wake up to the smell of garlic fried rice!
2 cups leftover steamed rice
6-8 cloves garlic, peeled and crushed
1/2 cup imitation crab, cut into tiny bits (or shredded)
2 tbsps Olive oil
1/3 cup fresh green onions, thinly sliced
Salt to taste
Your favorite breakfast meat (sausage, bacon, ham, etc)
1 tbsp fried shredded pork skin
Heat Olive oil in a large wok over medium heat. Add garlic and sauté until golden brown. Add cooked rice and stir fry for 3-5 minutes. Add imitation crab. Add salt to taste and cook for another minute. Turn off heat and transfer fried rice on to a serving plate. Sprinkle green onions over the rice and add your choice of cooked breakfast meat. Top with shredded pork skin.
