Veggie Penne with Channa Masala
Imagine a fusion of Italian and Asian Indian, as in pasta and masala — vegetarian, and ready in just a few minutes! We’ve all seen wonders coming out of microwavable food pouches and boxes, but sometimes, there’s greater magic in combining two seemingly incompatible items.
I came across products under the Tasty Bite brand, mostly vegetarian and all-natural microwavable pouches ranging from rice to noodles to stews. And Channa Masala, a popular Indian recipe of chickpeas slowly simmered with onions, tomatoes and wonderful spices. I’ve had masala before and I always partnered it with rice or naan. But then I thought, what if I used the masala as sauce for my pasta? And in keeping with the vegetarian theme, I even used veggie penne. The entire process took only about ten minutes, mostly cooking the pasta, then heating the Channa Masala pouch in the microwave for one minute!
Half a box of veggie penne (about 6 oz)
One pouch of Tasty Bite Channa Masala
1/2 cup cooked green peas
1/4 cup grated cheese
Cook the penne according to package directions, 8-9 minutes. Heat the pouch of Channa Masala in the microwave, 1 minute. On a serving plate, spread the cooked penne and pour over the Channa Masala. Top with green peas. Sprinkle grated cheese over the pasta. Serve warm.
