Green Bean Salad with Salted Duck Eggs
The only way I know to enjoy salted duck eggs (itlog na maalat) is to eat them with fresh sliced tomatoes and onions and sprinkle them with vinegar. In the Philippines, salted duck eggs are usually partnered with fried or grilled meats, fish or breakfast favorites like sausages (longaniza) or cured pork (tocino). One day, I had a craving for salted duck eggs but I wasn’ t really in the mood to eat fish or meat. So I thought of making up a green salad along with the duck eggs. I had just bought a package of green beans that day and without any hesitation, I worked up this fresh salad recipe. I enjoyed it warm for dinner and chilled for lunch the next day.
2 cups fresh green beans, blanched and cut into 1-inch pieces
1 cup tomatoes, sliced into tiny cubes
1/2 cup cup chopped shallots
2 salted duck eggs, each sliced into eighths
Salt and pepper to taste
1/3 cup white vinegar
2 small red chili peppers, thinly sliced
1 tbsp brown sugar
1 tbsp, sesame seeds
In a large bowl, combine green beans, tomatoes and shallots. Add salt and pepper to taste. In a small bowl, combine vinegar, chili peppers and brown sugar. Stir well then slowly pour into the salad mixture. Toss. Add the salted duck egg slices , and sprinkle with sesame seeds. This salad may be enjoyed either warm and chilled.
