Got Shrimp?

photoThe best things in life may not always be free, but they can be quite affordable and easy to prepare.  Like this shrimp dish. All it takes are some shrimp, frozen peas and peanuts.  With the help of hoisin or plain soy sauce, you can have a delicious dinner in just a few minutes. Your dinner guests might even think it to be gourmet!

INGREDIENTS

1 lb cooked shrimp, peeled

2 cups frozen peas

1 cup unsalted peanuts

2 tbsps olive oil

1/2 cup vegetarian hoisin sauce

Salt and pepper to taste

DIRECTIONS

In a large wok, heat olive oil in medium-high heat. Add frozen peas and sauté for about a minute. Add cooked shrimp* and stir- fry for another minute. Add peanuts. Add hoisin sauce, making sure to coat the shrimp evenly. Reduce heat and let simmer for one minute. Remove from heat and serve.

*If using uncooked shrimp, add water to a pot and bring to a boil before adding shrimp. Simmer for a few minutes until the shrimp turn pinkish.  Remove from heat, drain and let cool before peeling
