Forget Prix Fixe, Try This Quick-Fix Sautéed Spinach

You’ve heard the term “Prix Fixe” before. Many upscale restaurants serve this menu choice consisting of pre-selected appetizer or salad, main course and dessert all  for a set price.  But when at home and in a hurry, or just don’t have the time to spend cooking up a healthy meal for one reason or another, try this quick-fix dinner that will surely tease your appetite and add points to your healthy meal score! While I used some turkey bacon bits  in this recipe, they can be skipped for a fully vegetarian option.


12 oz package of baby spinach, washed

6 cloves garlic, peeled and chopped

1 medium white onion, chopped

1 medium tomato, chopped

1 tbsp fresh ginger, peeled and sliced int small thin strips

1/4 cup pepitas (roasted squash seeds)

1/4 cup turkey bacon bits

2 tbsps white vinegar

Salt and pepper to taste

2 tbsps olive oil


In a large wok, heat olive oil in medium-high heat

Add garlic and sauté until golden brown

Add onions and cook for 1 minute

Add ginger and tomatoes and cook for another minute

Add water and vinegar and bring to a soft boil

Add spinach, stirring constantly until the leaves start to wilt

Add salt and pepper to taste

Remove from heat

Sprinkle pepitas  and turkey bacon bits  allover the mixture and serve
