Leche Flan with Fresh Blackberries

Leche Flan is among the most popular desserts in the Philippines. It is akin to creme brulee. No parties, potlucks or celebrations are ever complete without this rich, creamy and delicious dessert. On many occasions, leche flan is used along with other dessert items like ice cream, halo-halo (Filipino dessert/snack  with shaved ice), or fresh coconut. It also goes well with fresh fruit like strawberries or banana. For this recipe, I chose to to pair leche flan with blackberries. They complement each other quite well, appealing to both the sense of taste and sight!


6 pieces raw eggs

1 cup condensed milk

1  cup evaporated milk

1/3  cup brown sugar

1 tsp vanilla extract

(You will need ceramic or aluminum baking molds.  I used 5,   2 ” x 4″ aluminum molds)


Separate the egg yolk from the egg white (discard the egg white)

Beat or whisk the egg yolk

Add the condensed milk and evaporated milk and mix thoroughly

Divide the sugar among the molds

Place the molds on a burner in very low heat to melt the sugar, making sure not to burn the sugar

Remove molds from burner and pour the egg mixture in to each mold

Cover the molds with aluminum foil and place them in a steamer

Steam for about half an hour

Refrigerate the flan until ready to serve

Turn the  molds over and  place the flan on a serving plate

Serve with fresh blackberries

(Makes 5-6 servings)
