Mango and Tomato Salad

You say to-mah-toe, I say tomāto. You say māngo, I say mah-ngo. No big deal. They go quite well together, I mean the mango and tomato.

I have been craving for ripe mango for quite some time when lo and behold, while shopping at my favorite Asian grocery store in San Jose yesterday, I found boxes and boxes of ripe mango. I could only purchase a whole box, not individual fruits, but I went for it.  After all it was a bargain!

So sitting by my kitchen counter thinking what I would do with a whole box of mangoes, it suddenly dawned on me to try this salad recipe. I couldn’t be happier with the result!

As for the rest of the mangoes? Who knows what I’ll come up with tomorrow. Mango chicken? Mango beef? Mango with ice cream? We shall see!

INGREDIENTS

2 ripe mangoes, peeled and cut into medium-sized cubes

2 medium tomatoes, cut into similar-sized cubes

1 lime, sliced in half

1/3 cup cilantro, chopped

1 green pepper, sliced

1 small onion, diced

Salt & pepper to taste

DIRECTIONS

Combine all the ingredients (except the lime) in a mixing bowl

Using a strainer, squeeze the lime over the mixture

Add salt & pepper to taste

Stir the mixture using a spatula

Serve immediately or chill in the refrigerator before serving

(Makes 4-6 servings)
