Pear & Walnut Spinach Salad
This is one of my favorite fresh salads. It has vegetable, fruit and nuts all in one serving! For this particular recipe, I’ve added some fresh avocado slices. I like adding avocado to many of the dishes I prepare.
Walnuts are probably the most unique among all the nuts just because nuritionally, they contain polyunsaturated fatty acids of both the omega-3 and omega-6 families, but no cholesterol. Walnuts are also rich in antioxidants. They’re almost a doctor’s prescription against cancer and heart disease!
2 cups baby spinach
1 Anjou or Asian pear
1/2 fresh avocado
1/2 cup walnuts
For the dressing:
2 tbsp water
1 1/2 tbsp red or white wine vinegar
1 tbsp olive oil
1 tbsp honey
2 tsp dijon mustard
1/4 tsp black pepper
1/tsp sesame seeds
Combine all the ingredients for the dressing using a whisk
Peel and remove the seeds from the pear. Cut it into thin slices
Cut the avocado into similar thin slices
On a salad plate, spread the spinach leaves and add the pear and avocado slices
It is best to chill the salad before serving
When ready to serve, add your desired amount of dressing and toss.
